(This recipe came from Mary Helen Moricoli. She served it with some of the world's best lasagna and a fabulous blueberry cheesecake in the 1970s. I think the bread is similar to that you get at Pepperoni Grill today.)

4 c flour
3 oz grated Romano cheese
3 pkgs yeast
2/3 c Parmesan cheese
1/3 c melted butter
7 eggs
2 t pepper
1 T salt
12 oz Swiss cheese (2/3 grated, 1/3 sliced)

Mix flour, grated cheese and salt together. Dissolve yeast in warm water. Melt butter and add to eggs, yeast and pepper. Make bowl like formation with flour, cheese mixture -- gradually pour in egg mixture and mix. Flour hands and rub mixture off -- knead -- grease pan and bread with olive oil --- cut rest of Swiss cheese and stick down into dough -- let dough rise to twice its normal size -- set in warm place and cover with cloth. Punch down dough and shape into loaf. Place on greased cookie tray. Preheat oven to 350 degrees. Bake 1 hour at 350 degrees then turn down to 300 degrees to finish.

Great for dipping in olive oil and balsamic vinegar!
