Aunt Eleanor's Baked Butter BeansThis is a featured page

1 lb. dried large lima/butter beans 3 tsp salt (divided use) ¾ C. brown sugar 1 Tbs. molasses ¾ C. butter 1 Tbs. dry mustard 1 C. sour cream Soak beans overnight. Drain off water and cover with fresh water and 1 tsp salt. Cook until tender (30 or 40 minutes). Drain and rinse under hot water, then place half of beans in a casserole and dot with butter. Mix brown sugar, mustard and remaining salt in a bowl. Sprinkle half over the beans, and repeat. Add the molasses and pour the sour cream over all. Bake at 360 degrees for one hour or so.

Mother said Aunt Eleanor suggested adding some chopped ham. I’ve not tried that.
