Cousin Charlie's Grits au GratinThis is a featured page

(This is from the recipe file of Charlie Park. I think the first time I had this was at his engagement party to Jan Johnson in Chickasha back in the early 70s. Since then it's become a family favorite, appearing most often at Thanksgiving or Christmas and we we wonder why not more often. I think it's great with BBQ brisket.)

1 1/2 c grits - 6 c boiling water - 3 t salt

Cook 5 minutes with stirring. Add 1 1/2 sticks oleo and 1 lb. grated cheese, 2-3 shakes Tabasco, 3 eggs (slightly beaten) and 2 t savory salt. Cook in buttered casserole at 350 degrees for 1 hour.
