Marian's Puppy Chow
PUPPY CHOW 9 cups Chex cereal (any variety – and it doesn’t have to be Chex brand)( Rice is especially light and crispy; Emily especially likes it made with Quaker Oatmeal Squares – I think that’s the name of it….has some brown sugar on it. They’re heavier and pretty solid. I usually use a mixture.) 1 package (6 ounces) semisweet chocolate chips (1 cup) ½ cup peanut butter ¼ cup butter or margarine (1/2 stick) 1 tsp vanilla 1½ cups powdered sugar Measure cereal into large bowl. Set aside. Microwave chocolate chips, peanut butter and butter/oleo in 1-quart microwavable bowl uncovered on High 1 minute; stir. Microwave 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour chocolate mixture over cereal in bowl, stirring until evenly coated. Pour into a two-gallon plastic food storage bag; add powdered sugar. Seal bag. Shake until well-coated. Spread on waxed paper to cool. Store in airtight container in refrigerator. 9 cups snack. (Marian’s tips: I’ve tried doubling the recipe, and it’s just too much to easily handle. I usually just make the recipe twice. …you can use the same melting bowl and mixing bowl without washing them. BE SURE NOT TO LET ANY DROPS OF WATER TOUCH THE CHOCOLATE! It will make the chocolate “seize.” May not take full one minute and 30 seconds to melt. Check and stir. Don’t overcook. I usually leave out the vanilla…put it in if you want to…doesn’t matter either way. I usually use close to 2 cups powdered sugar…seems like 1½ C. doesn’t cover the chocolate well enough. If that’s too much sugar, it’s o.k. – the extra will fall off on the waxed paper. I usually let this sit out on the paper overnight to get thoroughly cool and dry. You can run your hand over it to spread it evenly - now and then - when you think about it.) (I always think of my kids and grandkids when I make this. That’s fun.)
