Marinated veggie salad
(makes a lot)…good for a potluck dinner
Large bunch of broccoli (or some broccoli crowns if you can find them)
One head nice cauliflower
One can black olives (drained)
One can sliced water chestnuts (drained)
For the rest, use any combination of green bell peppers, yellow bell peppers, red bell peppers, thinly-sliced carrots, sliced green onions or red onion, small tomatoes (whole grape tomatoes work best, but you can use cherry tomatoes cut in half), yellow squash, baby corn…anything crisp and colorful. … Cut into bite-size pieces. Some cubed white cheese – I use monterey jack – you can use feta if you like it
You’ll need a very large bowl or pan to mix this in. I use the largest-size aluminum bowl – almost dishpan size. Wash broccoli and cauliflower and break/cut into bite-size flowerlets (not big chunks). Add olives, water chestnuts, and assortment of colorful bite-size veggies. Put it in a large Ziploc bag or two ….the last time I made it I had to use two gallon bags Add a bottle of Wishbone Italian dressing. (If you have to use two bags, just divide the bottle between them.) Seal and marinate in fridge overnite….. I usually set the bags into a large mixing bowl (that big yellow one) in case of leaks. Turn occasionally when you think about it, so the dressing reaches every piece. Put in large serving bowl and add the cheese cubes.. Mix gently. Keeps well in fridge. This will get better the second day, but I usually don’t have much left over after the first day.
