2 cups fresh basil, lightly packed
1/2 cup olive oil
2 T pine nuts or walnuts
4 cloves of garlic, or to taste
3/4 t salt
1 1/2 t lemon juice (prevents darkening)
1/2 c grated Parmesan cheese

Place all ingredients except Parmesan in blender or food processor. Mix at high speed, scraping down. Add Parmesan and lightly blend. Store in covered container in refrigerator or freeze. Makes approximately 1 cup of pest.
