Nell's Spinach Quiche
1 10 oz package chopped spinach, thawed and squeezed dry.
3/4 c. chopped onion
1 large clove garlic, minced
3 large eggs, beaten in large bowl
1/2 c. milk
1 1/2 T cornstarch
1 c. whipping cream
4 oz. original pepperoni, coarsely chopped (use Turkey Pepperoni)
4 dried tomato halves, coarsely chopped
1/4 t. salt
1/4 t. dried pepper flakes
4 oz. Swiss cheese, grated
4 oz. Mozzarella, Monterey Jack or Provolone cheese, grated
1 t. Italian seasoning
Lightly grease 10-inch pie plate. Place chopped pepperoni on paper towels. Microwave 1 minute on defrost. Add 1 t. bacon grease or oil to skillet and add onion and garlic and 1/2 c water. Cook until onion is tender. Combine cornstarch and milk in small bowl. Then add milk mixture and cream to eggs. Add spinach, onion and garlic, salt, pepper flakes and Italian seasoning. Mix well. Add cheese and mix ell. Pour into prepared pie plate. Cook at 350 degrees for 25 minutes or until knife inserted an inch of the center comes out clean. Cool for 10 minutes before serving.
(This is good for Atkins Diet lovers because there is no crust.)
