(We grew lots of zucchini on the farm and this was a good way to use the extra. The bread can be frozen.)

1 c oil
3 eggs
2 c grated zucchini
2 c sugar
1 t vanilla

3 c flour
1/4 t baking powder
1 t salt
1 T cinnamon
1 t soda
1/2 c chopped nuts
1/2 c raisins

Sift flour, baking powder, salt, cinnamon, and soda together in large mixing bowl. Stir in oil, eggs, zucchini, sugar, vanilla. Stir well. Fold in nuts and raisins. Place in greased loaf pan. Bake 1 hour at 325 degrees.
